I’ve mentioned it a couple of times before, but I love Mexican food. The chips, queso, guacamole, enchila-das ... you name it and I love it. When I started low-car-bing I really thought those days were behind me; how-ever, you can incorporate whatever you are eating to fit your low-carb lifestyle. I grew up in the Oklahoma Panhandle (Guymon) and spent a lot of time as a child in New Mexico whether it be for snow skiing or family vacations in the mountains. Delicious Southwest flavors are rooted into me ... wheth-er it be Tex-Mex, Pueblo style or Mexican cuisine. Chicken enchiladas were a favorite dish when din-ing out. Flavorful shredded chicken rolled into a tortilla and topped with enchilada sauce and cheese was differ-ent in every restaurant but always good.
