It was so beautiful over the weekend. It was almost like I went to sleep and woke up to winter. All I can say this morning is that it’s cold. Very cold.
I’m going to continue giving you some recipes for soups.
Today I’m going to go a little outside the low-carb realm and give you some recipes for simple but tasty soups.
This first recipe used to be one of my favorites. It was easy and tasted so good.
You can top this with bacon, cheese and green onions for the ultimate potato soup.
This soup is versatile so you can add broccoli or ham and give it a twist.
You literally throw all of the ingredients in and walk away. It’s that simple. 'Make It HEATHY
In a slow cooker, combine potatoes, chicken broth, soup, onion, and pepper.
Cover and cook on low for 5-6 hours. If your potatoes are still in big chunks you need to cook it longer. They will start falling apart when it’s ready.
Add the cream cheese and cook 30 minutes or until cream cheese is melted, stirring occasionally, until combined.
Top with cheese, bacon, or sliced green onions if desired.
—————Homemade chicken noodle soup is a tried and true comfort dinner with celery, carrots, onions, chicken and noodles. This recipe includes an easy recipe for homemade noodles that makes it even better. I hope all you carb lovers enjoy!
For the noodles: In a large bowl, stir together the flour and salt. Add the beaten egg, milk, and butter. Knead dough until smooth, about 5 minutes. Let rest in a covered bowl for 10 minutes.
On a floured surface, roll out to 1/8 or 1/4 inch thickness. Cut into desired lengths and shapes.
Separate and allow to air dry before cooking. For best results, let them air dry for a couple of hours but I’ve been in a rush and only let them dry 30 minutes and they were fine.
For the soup: In a large pot over medium heat, melt butter. Cook onion, celery, and carrots in butter until just tender, 5 minutes. Add the garlic and cook for an additional minute. Pour in chicken broth and stir in noodles, basil, oregano, (optional) poultry seasoning, salt and pepper. Bring to a boil, then reduce heat and simmer 20 minutes. Stir in the chicken and cook until heated through. Serve.
