I have always been a huge fan of Sloppy Joes. When I started low-carb I figured I would never eat one again ... not only because I can’t have the bread I usually served them on, but the sauce is usually full of sugar.
This Sloppy Joe pie crust is made by combining almond and coconut flours into melted butter and mozzarella cheese. This style of dough is often referred to as
Fat Head crust (I’ve talked about this before).
The recipe indicates you should microwave to melt the butter and cheese because it is faster than using a stove.
The mozzarella adds the elasticity that’s typically missing in gluten free breads.
It’s best to fold the dry ingredients into the dough. If the cheese starts to harden, you might need to microwave it for 5-10 seconds to soften it back up.
If I were baking the crust by itself, I’d use parchment on the bottom as mozzarella cheese based low-carb crusts bake best on parchment paper.
You can crimp the edges of the crust or just push them down a little to ensure the meat mixture is sealed underneath.
Preheat oven to 400°F.
Brown ground meat with onion, drain off any excess fat.
Stir in Worcestershire sauce, soy sauce, tomato paste and sweetener.
Spread meat mixture into 9 or 10 inch pie pan.
In large bowl, melt mozzarella cheese in microwave (for my 900 watt, it was about 2 minutes at 40% power).
Stir butter and egg into melted cheese. Then knead in almond flour, coconut flour and onion powder with hands or spatula. (Microwave for 5-10 seconds if needed to better incorporate the ingredients into the cheese)
Shape crust dough into a ball and roll out between sheets of wax paper to a diameter to fit pie pan.
Remove top sheet of wax paper, then invert rolled crust on top of meat mixture in pie pan. Crimp edges of crust if desired.
Bake pie at 400°F for 15-20 minutes or until browned on top.
—————One of my favorite side dishes I like to cook when I grill chicken or steak or even a pork chop is grilled green beans. I have cooked this side dish for many of my non low-carb friends and they love it. Hopefully you do, too.
Combine the green beans with olive oil, garlic, salt, melted butter and Worchestershire sauce. Toss to coat and allow them to marinate for 30 minutes.
Preheat grill for medium heat and lightly oil the grade.
