Last week marked two full years since I’ve been following a low-carb lifestyle. I think the beauty of this diet is that I get to eat food that I really like. That is the only way I’ve been able to sustain it this long.
As I’ve talked about before, if you don’t enjoy the food you are eating you simply cannot sustain this way of eating long-term. I think that’s probably why I failed to follow a low-fat and low-calorie diet for so long. Although I would lose weight initially, I just couldn’t keep it off because it wasn’t sustainable for me.
I eat a lot of meat with this diet. A lot. Chicken and steak are obviously my favorites.
This recipe is packed full of flavor and you’ll never say that chicken breasts are not flavorful. It is stuffed with sun-dried tomato in oil, spinach and mozzarella cheese. You sear it in a cast iron skillet and bake in the oven for about 20 minutes.
The best part of this recipe is you can stuff the chicken breast with pretty much anything you like such as olives, more cheese, kale, peppers, onions and more.
These breasts are great with some roasted vegetables, cauliflower mashed potatoes or even on its own with a side salad.
Preheat oven to 350 degrees. Place chicken breasts on a cutting board and cut a pocket into each chicken breast, but don’t cut all the way through.
Season the chicken with salt and pepper (inside and out). Stuff the chicken breast with chopped sun-dried tomato then stuff with cheese and spinach. Using toothpicks, seal the stuffed chicken breast.
In a cast iron skillet, add olive oil over high heat. Add chicken and sear it for about two minutes until the chicken gets golden brown.
Place the skillet in the oven and bake for 20 minutes or until the chicken is cooked through.
