The warmer weather is here once again. I saw a longrange forecast this weekend that calls for temperatures over 100 degrees. I am not a fan of using my oven or even cooking inside the house when that happens, so today I’m going to offer some recipes you can grill outside so your house stays cool.
The key is to minimize your time in the kitchen. You can start with some tips below:
— Fill your fridge with grab-and-go foods. Hardboiled eggs are proteinpacked snacks, or you can chop them up and add them to salad. Keep sliced veggies (cucumbers, bell peppers, tomatoes and avocadoes), olives and cheese cubes on hand for snacks or salad toppings. Rotisserie chicken and deli ham, turkey or roast beef are perfect for wraps, roll-ups or salads.
Tuna is an easy snack or meal, but don’t thin of it as just ordinary. Pile this zesty tuna recipe on slices of cucumber or tomato or on a bed of fresh spinach.
Keto Tuna Salad
This recipe takes about two minutes to make and doesn’t require any chopping. It’s kid-friendly and low-carb.
1 cup canned tuna fish, drained (about two cups)
3 Tbsp. real mayonnaise
1 tsp. dried onion flakes
Salt and pepper
Combine the tuna fish, mayonnaise and dried onion flakes in a small bowl. Stir and taste.
Season with salt and pepper as desired. Store in the refrigerator.
————— My mom used to make tuna or salmon patties when I was growing up. I never really cared for them as a child but I have become a big fan of them now.
Helpful tips:
Be sure to use sustainable tuna such as Wild Planet, which is pole and line caught and lower in mercury.
Drain the tuna very well. Wild Planet says you don’t need to drain it and that’s true for tuna salad but it’s best to drain it for these tuna burgers.
Use a low carb binder such as almond flour or coconut flour, to help the patties hold their shape.
Good health mayonnaise helps make the tuna burgers moist and delicious.
Form them firmly by hand into nice even patties about 3/4 inch thick.
They shouldn’t be more than 3 to 4 inches in diameter.
A non-stick skillet works best for easy flipping. Flip them carefully. Once they are cooked well on one side, they hold together nicely.
