Two-and-a-half years into my low-carb journey and I still love salad. I’ve eaten it about three to four times a week for the last two plus years and yet I haven’t grown tired of it. I have to admit that I’m pretty lazy when it comes to making fantastic salads. I tend to use Organic
Girl pre-made lettuce and then spruce it up with tomatoes, onions and whatever salad dressing I’ve got on hand.
About a month ago a friend of mine introduced me to a company in Kay County called Salad Express. She told me I could place my order on Facebook (just search for Salad Express on Facebook and join the group). I was a little hesitant but decided to give it a try. I am so glad I did.

The featured salad changes every week. I have tried the club salad, chef salad and caprese salad. All three have been absolutely fantastic. You need to order the day before you want your food.
The cost is $10, which includes delivery. They also have a featured soup every week. This week is broccoli cheddar.
Their classic garden salad features greens, yellow squash, cucumber, zucchini, onions, tomatoes, peppers, nuts, fruit, beans and crouton (which I do not eat). They paid it with a vinaigrette dressing that is low in calories and high in protein.
The chef salad features greens, tomatoes, onions, eggs, cheddar cheese, almond slices, mini pepper rings, cucumbers, ham, roasted chicken and a crouton.
Another option is the berry salad. This includes greens, kale, squash, cucumbers, carrots, sweet peppers, candied nuts, berries and goat cheese. I haven’t tried this one since I stay clear of fruit but I’ve heard it is fantastic.
The featured salad this week is the Asian salad. It includes greens, red cabbage, shredded cabbage, scallions, marinated grilled chicken, chow mein noodles and edamame. It is served with a sesame vinaigrette.
The caprese salad was probably my favorite. I am a huge fan of balsamic dressing. They include grape, cherry and heirloom tomatoes, fresh mozzarella balls and locally grown basil. It is served on a bed of fresh greens and zucchini and paired with a homemade garlic balsamic dressing and grated Parmesan cheese. It was incredible.
