Football season is in full swing across the U.S. The
Ponca City Wildcats are 2-0 for the first time in several years, and Oklahoma State and OU are also both 3-0 for the start of the season.
Things don’t get much better than that.
I love hosting parties at my home during football season.
There’s something about fall and football season that just makes me want to host events. Since starting on this low-carb journey over two years ago, I often struggle on what to serve that will also keep my carb loving friends happy. I’m going to highlight a couple of recipes in today’s column that will be tasty for everyone attending your event.
Dipping bite-sized chicken wrapped in bacon into a creamy ranch dressing makes for an awesome appetizer. Aside from the necessary cutting of the chicken and bacon into pieces and mixing some seasoning and spices together, it’s not really time consuming.
If you choose to bake these on a regular baking pan these will produce crispy looking bites. You can also places the bites on a cooling rack over a baking pan if you’d rather have less grease and less crispy pieces of bacon.
Wrap the pieces bacon over each piece of chicken.
Line two baking sheets with aluminum foil or you can use a cooling rack over the baking pan.
Whisk the last 3 ingredients together in a bowl and roll each chicken bite into the mixture.
Place chicken bites on baking pans or cooling rack over pans.
Bake for 25- 30 minutes. Serve with ranch dressing.

I clicked on it and looked at the ingredients but it was a hot baked dip and this time of year I prefer dips that are cool or room temp. I thought about it and decided I just needed to try it.
When using bacon crumbles make sure they are real bacon and not the fake ones made from soy. There is a huge difference between the two.
I use onion, garlic, salt and smoked paprika in the base of my dip. The smoked paprika is really the secret ingredient because it gives it a smoky, bacon flavor throughout.
