I never realized how much I went to all the non-essential businesses until they were closed. I also never realized how I took going to eat at a restaurant for granted. If there’s one thing I think we can probably all agree on is that after this is all over, we won’t be taking some many of those things for granted. I definitely know I won’t.
I took matters into my own hands last week and tried to tend to my own nails. I was successful but I’ll tell you this ... I paint like a first grader. My nails are extremely long so it should have been easy. It wasn’t. I had nail polish all over my hands and all over my kitchen table. Heck I even had it on my clothes ... I have no idea how in the world that happened.
I have been really taking things easy on my hair. I’ve been trying not to wash it as often as I normally would because I know with every wash some of the color I had 12 weeks ago will continue to fade away. I have decided that dry shampoo may be one of the best things ever invented for a woman. It has helped me tremendously the last couple of weeks. I said it last week and I’ll say it again ... my deepest apologies to my hair stylist. My hair will be a hot mess when things open back up again, but then again I’m sure my hair won’t be any different than anyone elses.
OK so back to healthy cooking. So many of my friends have told me they’ve done nothing but gain weight during this quarantine because they are home and cooking more than they ever have. I guess maybe I’m the complete opposite. When I get stressed out about things I simply do not eat much. That’s likely how I’ve been able to lose 17 pounds in the last three weeks. I cook plenty but when it’s time to eat I’m just not hungry.
One of my favorite meals my mom would make when I was growing up was chicken and rice. Oh how I loved that stuff. I still do but now I’ve incorporated riced cauliflower instead of the rice. I’ve become so used to eating cauliflower that I honestly don’t tell much of a difference.
