This week I am celebrating my third year of low-carb. It seems hard to believe it has really been that long, although I’ll say Facebook is a pretty good reminder when it shows me memories of pictures of myself three plus years ago.
For those of you that have followed me since the beginning, I weighed 275 pounds on June 1, 2017. I lost 130 pounds after about 18 months and have kept the majority of it off over the last 18 months, give or take about 20-25 pounds. I set a weight limit for myself and when I start eating bad and gain some of the weight back, I restart on low-carb until I get down to the weight I find works for my body.
I follow the Atkins lowcarb diet and have from the beginning. I drink an Atkins shake every single morning for breakfast and have almost every single morning since then. I have never been a huge breakfast person so a shake suits me perfectly.
I won a national Atkins contest about two years ago for Women Over 40 and they flew me to Denver to shoot a video promo for them to feature on their success stories website and on Facebook. They finally released it a few months ago but you can find it on their website.
About two weeks ago, I got an email from a public relations firm that represents Atkins in New York City. They want to share my success story with the world on a more national level. That means that come October, Atkins will be flying me to New York to work with this public relations firm. They are going to roll out a national campaign about me and what Atkins has done for me. I will be featured in television commercials, a national advertising campaign and will be in People magazine. I am absolutely thrilled and honored to have the chance to do this.
So what does that mean for me right now? I am doing the very harsh restart of lowcarb. By harsh I mean I do not eat any more than 15-20 net carbs a day. I have started drinking shakes twice a day for breakfast and lunch and eat a protein and a vegetable at night. I absolutely do not snack and drink over 100 ounces of water a day.
