With all the COVID-19 Coronavirus stuff going on, it’s hard to think about food but yet we all continue to cook at home. This week I’m going to go off the lowcarb recipe route and give you some very easy recipes you can make at home with ingredients you likely already have on hand in case you haven’t been to the grocery store.
I’m one of those that haven’t been to the store I’m one of those that haven’t been to the store either. I’ve been putting it off ... I’m definitely not one of those that went out and bought all the toilet paper off the shelves. I keep seeing those pictures flood my Facebook page and continue to shake my head. Seriously ... just stop. I’ve even been seeing people trying to sell their toilet paper. Even more of a head shake on my end. either.
In a mere 15 minutes and with the greatest of ease, you can make the most deli In a mere 15 minutes and with the greatest of ease, you can make the most delicious Spaghetti alla Carbonara you have ever had. And best of all? This recipe is only FOUR ingredients and is very budget friendly.
Spaghetti alla Carbonara is a traditional Italian pasta dish that has pancetta (bacon can also be used) and is tossed with a mixture of parmesan cheese and eggs.
If you’ve never had it, it may sound a bit strange. Don’t worry though ... the pasta is not coated in raw egg. Instead, the heat of the spaghetti cooks the egg gradually, creating a super creamy consistency that mimics a lighter version of alfredo sauce.
Quick and Easy Spaghetti alla Carbonara
1 lb. spaghetti or fettuccini
2 eggs
1 cup parmesan cheese, shredded
Kosher salt
Black pepper, to taste
1/4 ccup fresh chopped parsley, optional
4 ounces pancetta or bacon
Cook pasta according to directions in heavily salted water until al dente. Reserve 1 cup of the pasta water.
Meanwhile, mix together the 2 eggs, parmesan cheese (1/2 cup), salt, pepper, and 1/4 cup parsley (if using) in a small bowl, creating a pastelike consistency. Don’t salt too heavily- there is plenty of salt in the pancetta and the parmesan cheese! DO add a hearty amount of fresh cracked black pepper. It gives it a nice kick.
In a deep skillet or even a large pot, cook the pancetta over medium high heat (If you are using bacon, just cut it up ...
