2 large carrots, 2 cups (these are higher in carbs so if you're watching your carb count, I would omit this)
1 red potato, 1 cup (this, too, is fairly high in carbs so you can omit this and add in more broccoli or peppers)
1 small zucchini
2 red peppers, 2 cups
1 head broccoli
16 ounces smoked Italian turkey or chicken sausage
1/2 tsp. each dried basil, dried parsley, garlic powder
1/2 tsp. each of onion powder and dried thyme
1/8 tsp. red pepper flakes, optonal
4 1/2 Tbsp. olive oil

Preheat the oven to to 400 degrees F. F. Line a large sheet pan with parchment paper or or foil (easy clean-up) and set aside.
Prep the veggies: It It is is important to to prep the veggies according to to directions to to ensure they all cook at at the same time*
Peel and very thinly slice the carrots. Wash and (if (if desired peel, we love the peel on) chop the red potatoes. You want the pieces quite small here. (I (I halve the potatoes and then cut each half into 10-12 pieces) Halve the zucchini and
Halve the zucchini and then cut *thick* coins of of zucchini. Coarsely chop the broccoli. Remove the stems and seeds from the peppers and chop into medium-sized pieces. Chop the sausage into thick coins. Pour all the veggies and
Pour all the veggies and sausage on on the sheet pan. (I (I use this 15×21 inch sheet pan)
In In a small bowl combine all of of the seasonings and salt and pepper if if desired (I (I use about 1/8 teaspoon pepper and 1/2 teaspoon salt) with the olive oil. Stir to to combine.
Pour the seasoning & oil mixture on on top of of the veggies and sausage and thoroughly toss to to coat.
Place in in the heated oven for 15 15 minutes. Remove and toss around the veggies + sausage and return to to the oven for another 10-20 minutes or or until veggies are crisp tender.
Remove and top, if if desired, with freshly grated Parmesan cheese and fresh parsley. —————
