Are you planning on having a cookout on Memorial Day weekend? Are you wanting to make it low-carb or keto? Today I’m going to offer some recipes that don’t contain a ton of refined sugar to get you through this long upcoming weekend.
You can’t have a cookout with burgers. Although you will have to skip the bun this recipe only contains nine ingredients and can be made in only 20 minutes.
The beauty of a meal like this is that you can modify it to your heart’s content and make it your own.
Low Carb Mushroom Burger
Burger:
1lb. ground beef
1 tsp. salt
1 tsp. chili powder
1 tsp. ground cotiander
For the rest:
4 portobello mushrooms (stems removed and gills scraped out
4 slices pepper jack cheese
4 slices tomato
4 lettuce leafs
1 onion, sliced
Preheat oven 350ºF/180ºC.
Drizzle olive oil over the mushrooms and season generously with salt and pepper.
Sauté the onions in a little bit of oil and a knob of butter over a medium heat. Season lightly with salt and pepper. Keep it cooking while you continue with the rest of the steps. Stir occasionally.
While the mushrooms bake and onions caramelize, mix together the ground beef, salt, dried chili and coriander and mold into 4 patties.
Cook the patties for approximately 2 minutes on each side over a high heat.
While the patties are still in the pan, put a slice of cheese on each patty and allow to melt. You can also put a lid on the pan for about 30 second to speed things up.
Once the mushrooms are done, everything else should be ready as well. All you need to do is to assemble the burgers:
1. start with a mushroom,
2. add lettuce and tomato,
3. slide on the burger
4. and lastly, top with the carmelized onions.
These can be served with sweet potato fries (lower in carbs than regular potatoes) and topped with mayo.
Try this healthier version of a classic summer side dish. Coleslaw is a must have with a cookout and you can make a few healthy swaps to stay on the low-carb, keto wagon. This only takes eight ingredients and 10 minutes to fix.
This is a vinegar-based coleslaw, not the mayo-based coleslaw that you might be used to. If you like your coleslaw creamy, cut the dressing recipe in half and mix in 1 cup of mayo.
