The new year is upon us.
I don’t know about you but
I have REALLY struggled to stay low-carb the last several weeks. Who am I kidding?
I’ve struggled since Thanksgiving. There’s simply too many things going on from
Thanksgiving to my birthday to Christmas and then New
Years.
Like most, I have set my resolution for 2020 to get back in the groove of staying low-carb. That means cutting my net carb intake to less than 25 net carbs a day or below. That’s how I lost so much weight. When I say net carbs you take the carbs minus fiber to get the net carbs.
Just look on the package of whatever you are eating to determine what the net carbs will be.
When I first started this way of eating, I came across a recipe for peanut butter cookies. I don’t know about you but I’ve always loved them. I hope you will enjoy these as much as I do. All you need is peanut butter, vanilla extract, an egg and some sugar substitute. It’s that simple! ing sheet with parchment paper.
Combine peanut butter, sweetener, egg, and vanilla extract in a bowl; mix well until a dough is formed.
Roll dough into 1-inch balls. Place on the prepared baking sheet and press down twice with a fork in a crisscross pattern.

—————This next cookie recipe reminds me of a pecan sandy. It has the same kind of texture. It is a perfect dessert for those on a low-carb or keto diet. For best taste, refrigerate before serving. F (165 degrees C). Line a baking sheet with parchment paper.
Combine coconut, almond meal, coconut oil, egg white, water, vanilla extract, Himalayan sea salt, and stevia powder in a large bowl. Let sit until coconut softens, about 10 minutes. Roll into generous tablespoon-sized balls; place on baking sheet. Flatten gently with a fork to prevent edges from crumbling.
