When you want comfort without the carbs, opt for warming, low-carb soup recipes packed with amazing ingredients and flavor.
I have become a huge fan of cauliflower.
I use it to replace mashed potatoes when I cook chicken. When I came across this recipe using cauliflower, bacon and mushrooms
I knew I had to try it.
A classic Tuscan soup has lots of potatoes, but I make mine the low-carb way with cauliflower. I think you’ll like the results.
Tuscan Cauliflower Soup

In a large saucepan, combine cauliflower, broth, water and garlic; bring to a boil. Simmer, uncovered, until cauliflower is tender,
12-15 minutes.
Meanwhile, in a large skillet, cook sausage and mushrooms over medium heat until sausage is no longer pink, breaking up sausage into crumbles, 6-8 minutes. Remove with a slotted spoon; drain on paper towels.
Add sausage and mushrooms to cauliflower mixture; return to a boil. Reduce heat; simmer, uncovered, 5 minutes. Stir in cream and pepper; heat through. Serve with bacon.
Each serving of this soup will be roughly
7 net carbs.
—————I admit that I was never a big fan of cabbage until I started low-carbing. I’m not really sure why. They often say your taste buds change over the years and mine certainly have. If you are a fan of anything spicy and cabbage you’ll love this recipe as much as I do.
This hearty soup is made with beef, cabbage and green chiles. Adding some cilantro gives it a nice kick.

In a large saucepan, cook and crumble beef with seasonings over medium-high heat until no longer pink, 5-7 minutes. Remove from pan.
In same pan, heat oil over medium-high heat; saute onion and cabbage until crisp-tender, 4-6 minutes. Stir in beef, chiles, water and broth; bring to a boil. Reduce heat; simmer, covered, to allow flavors to blend, about 10 minutes. Stir in cilantro. If desired, top with pico de gallo and sour cream.
Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally.
Each serving of this will run about 10 net carbs.
