Listen I have no idea what is going on with this weather. I have lived in Oklahoma most of my life (except for a short time in Amarillo, Texas) and our weather never ceases to amaze me. It will be beautiful one day and freezing the next. My body is having a tough time adjusting to the drastic temperature changes.
When the weather cools off
I want soup. I could actually eat soup the entire year but especially when things cool off.
It probably has to do with the fact that I equate soup to comfort food and I’m currently in the need of comfort food (I’ve been sick the last several days).
As I’ve often talked about,
Mexican food is my favorite thing in the world so it’s no surprise that I like soup that tastes like Mexican food. This recipe is seriously amazing. The broth is so flavorful and I promise you’re going to love it.
To start, you’ll add your chicken, broth, onions, chipotle peppers and onions to your slow cooker. I added a full two tablespoons of chipotle peppers and this soup came out spicy. You can mellow it out by stirring in some sour cream into each serving bowl.
You can also squirt in some fresh lemon or lime juice to brighten the flavors up a bit.
To make this in a slow cooker, add all of your ingredients to the slow cooker and cover. Cook on low for four hours.
Remove the chicken and shred with two forks.
Add the cream cheese to the soup mixture and whisk well to combine ... you want the cream cheese completely melted and incorporated into the broth.
Stir the chicken and some cilantro back into the soup and serve.
Add the chicken, onion, garlic, chipotles, cumin, chili powder, paprika, salt, lemon juice, lime juice, and chicken broth to a low cooker.
Cover and cook on low for 4 hours.
Remove chicken from pot and shred with two forks.
Add the cream cheese to the slow cooker and whisk constantly until the cream cheese is fully melted and incorporated.
Return chicken to the slow cooker and add the cilantro. Stir well to combine.
Serve immediately.
