I admit that I have been having too many cheat meals the last couple of months. I’m up roughly 12 pounds from my lowest weight last winter. Since the weather is turning cooler,
I got out my jeans from last winter. I don’t know if there’s some kind of conspiracy with the jeans and the dryer or just what but I’m certainly back to my strict low-carb way of eating for the next several months.
I am a huge fan of turkey. It’s something easy to make and I use the leftovers for many things throughout the week ranging from sandwich meat (on low-carb bread of course) and even on salads. Turkey is low in calories so if you are watching your calorie intake this recipe is for you.
You will be impressed when you slice this golden, grilled turkey breast, dressed up with a flavorful layer of basil and cheese under the skin.
Combine the cheese, basil, lemon slices and garlic. With fingers, carefully loosen skin from the turkey breast; place mixture under the skin. Secure skin to underside of breast with toothpicks. Rub skin with oil and sprinkle with salt and pepper.
Prepare grill for indirect heat, using a drip pan. Place turkey over drip pan. Grill, covered, over indirect medium heat until a thermometer reads 170°, 1-1/2 to 2 hours. Remove toothpicks. Cover and let stand for 10 minutes before slicing.
—————I have eaten a lot of chicken the last two plus years. One of my favorite things to cook is a chicken breast with sugar free barbecue sauce and shredded cheese. I often get tired of cooking chicken breasts so I’ve been cooking chicken thighs lately.
This version without skin and bones has a zesty rub of tumeric, paprika and chili powder. I serve this with some grilled zucchini and onions.
In a small bowl, mix the first eight ingredients. Sprinkle over both sides of chicken.
On a lightly greased grill rack, grill chicken, covered, over medium heat or broil 4 in. from heat until a thermometer reads 170°, 6-8 minutes on each side.
Each chicken breast runs at about 170 calories with 1 gram of carbs. Perfect if you are watching your calorie and carb intake.
