My mom is probably the best cook I’ll ever know. She cooked every night when I was growing up. She tried lots of new recipes when I was young so I’ve never been afraid to try something new.
I always figured I would try something at least once.
When I started on this low-carb journey I tried all sorts of things. One of those things included spaghetti squash.
I was a huge pasta lover. I was constantly searching for something I could make as a side dish that would fill the void pasta left when I quit eating it. I found that void in spaghetti squash.
For those of you that have never tried it, I urge you to.
It’s simple to make and low-carb and so versatile. You can cook it as a side dish with a meat or you can use it as your main ingredient.
The first thing I need to talk about is how to cook it.
First, cut it in half lengthwise. Then, scoop out the seeds and roast it.
Next, drizzle the insides lightly with olive oil and sprinkle with salt and pepper. Then, poke a few holes in the skin of the squash with a fork and place it cut side down on a baking sheet. Cook in a pre-heated oven at 400 degrees for 30-40 minutes.
If you don’t have time to cook it in the oven, try cooking it in the microwave and cook for roughly 20 minutes.

Heat a medium skillet over medium heat. Add the bacon and cook until crisp, about 5-6 minutes. Transfer bacon to a paper towel.
Cook your spaghetti squash whether it be in the oven or in the microwave. If you cook it in the microwave, preheat your oven to 400 degrees.
When the strings of the spaghetti are soft, transfer it to a bowl and combine with olive oil, heavy cream, green onions, Parmesan and bacon. Top with shredded cheese and put back in the oven for approximately 10-15 minutes.

Cut the spaghetti squash in half and take out the seeds. Place on a shallow baking dish with about an inch of water in it. Microwave for 5 minutes. Test to see if cooked by piercing it with a fork.
