I did. He comments daily that he’s amazed how great he feels and can’t believe he gets to eat the kind of food he does.
Sure it’s a tough one not to have a baked potato with grilled chicken, but like I told him ... concentrate on the things you can have instead of what you cannot.
When you’re considering going to a low-carb diet or simply reducing carbohydrates, full meals are a little easier to plan ... eating all the meat and veggies is a good option. But it’s nice to chow down on something a little lighter than a steak or chicken meal when it’s snack time. Unfortunately, the traditional snacks you’d reach for don’t normally fall into the category of low-carb snacks.
Low-carb snacks require you to say goodbye to pretzels and crackers, but in return you get to say hello to munchies like nuts and stuffed avocados, beef jerkey and more.
Today I’m going to feature a few of my favorite snacks. The first one is called Buffalo Chicken Celery Sticks. Sure, buffalo chicken wings are tasty. But what if you could have the buffalo chicken flavor combined with a crunchy celery stick in every bite? All you have to do to make these is use leftover chicken to make this speedy snack or side disk. You can cut back on the mayonnaise or even use a rotisserie chicken if you’re short on time.
This recipe is so easy it literally takes about five minutes to make.
Buffalo Chicken Celery

Mix the chicken, mayonnaise, garlic powder, salt, pepper and buffalo wing sauce together in a bowl.
Fill each celery stalk with chicken filling and garnish with chopped chives.
—————I love fresh tomatoes. If you happen to have a garden you know the enormous amount of tomatoes you’ll be getting.
I’m sorry to say I do not have a green thumb whatsoever. Most plants come to my house to die. I either forget to water them or water them too much so I’m always thrilled when someone brings me fresh tomatoes.
I have been a chip girl my entire life. I like crunchy and salty foods and miss my chips terribly. Bigger tomatoes work better for this recipe. If you do use smaller ones just remember they will shrink quite a bit.
