Make it HEALTHY
I have never been a big breakfast fan. Back in my pre-diet days, I’d usually just skip breakfast and then be starving by the time lunch rolled around.
I’m still not a huge breakfast fan, but I know many people that are. I’ve learned over the last two years that breakfast is very important because it kicks your metabolism in gear and gets you ready for the day.
Most days I will drink a protein shake for breakfast and that usually keeps me full until it’s time for lunch. When I’m at home on the weekends, however, I usually cook breakfast.
With any low-carb plan, bacon, eggs and sausage are staples in the breakfast world ... but I often get tired of that so I’ve tried a few other things. Mix sausage, salt, pepper, garlic powder, onion powder, paprika and dried parsley in a bowl until well combined.
Grease a muffin tin and start to form shells with the sausage mix. Cover the sides and leave room in the middle for the eggs.
In a separate bowl, mix the eggs, salt and pepper. Pour the egg mixture into the middle of each cup.
Top with shredded cheese, tomatoes, spinach or toppings of your choice. Bake at 350 degrees for 30 minutes.
In a small bowl, whisk together eggs, milk and chives, and season with salt and pepper.
In a large nonstick skillet, melt butter. Once pan is completely coated, add the egg mixture. Tilt pan back and forth to make sure it’s completely coated, then let cook, two minutes. Once you can move egg back and forth, carefully flip and cook two minutes more.
Transfer to a plate and top with bacon, avocado, cheddar and salsa. Roll up into a burrito and serve.
You can also use low-carb tortillas to hold your filling.

Place all ingredients in the blender and blend until smooth and frothy. Pour into a cup and enjoy. It’s that simple!
